Though you might think the brighter the vegetable, the better, this dark green leafy vegetable is filled with tons of nutrients, such as vitamins A, K, C, and fiber. Kale has easily become the trendiest leaf around. Kale has high concentration of nutrients, and that translates into a range of antioxidant and anti-inflammatory effects in the body. Kale is known to help with general health as well as heart disease and cancer, and has the broadest range of antioxidants. Kale has the ability to reduce certain types of cancer because of its ndole-3- carbinol, a nutrient that seems to play a role in how estrogen is metabolized in the body and may play a protective role against breast cancer. FYI cancer studies show that raw kale is more beneficial than cooked kale, and you should always make sure it is clean! As healthy as kale is make sure you eat it all in moderation, too much of anything is never a good idea!!
