Allicin interferes with enzymes necessary for the growth of these infectious organisms and also enhances a liver enzyme, which detoxifies aflatoxins before they cause damage. Aflatoxins are toxic compounds that are produced by certain molds found in food, and can cause liver damage and cancer.
